A little something personal that we wanted to share with our sweet brides and blog readers. I’ve been making these sweet treats for the past few weeks and EVERYONE goes crazy for them! Since I was making these for my sister’s baby shower anyway, I wanted to document each step and share with everyone how to make these cute little desserts! These are great for any gathering – weddings, birthdays, bridal showers, baby showers, holidays, etc.! We also started giving these away in our goodie bags at our group Paparazzi Mommy Workshops! They are always a hit!
Let’s get started with an ingredients and materials list:
What you’ll need:
1. Box cake and the ingredients it calls for. One cake will make about 32 cake pops.
2. Frosting
3. Kroger brand candy coating in vanilla flavor. We’ve shopped ALL around for what brand works best from local craft stores and other grocery stores and hands down, this is the easiest to work with. Everything else was basically a disaster.
4. Food coloring
5. Sprinkles
6. Lollipop sticks – sold at Hobby Lobby or Michaels
7. 4×6 inch clear treat bags
8. Coordinating ribbon
9. Styrofoam to hold the cake pops while drying
10. A mixer – a life saver!
Step 1:
Bake your cake, pretty simple!
Step 2.
Let your cake cool COMPLETELY in the refrigerator for several hours. Once cooled, break your cake into pieces and use your mixer to make it into tiny crumbs.
Once your cake is broken down completely, add SLOWLY your frosting to the cake crumbs and continue to mix. The frosting is used as a binder and makes your mixture ‘mushy’ so that you can roll it into cake balls. BEWARE! Add the frosting slowly…you don’t want to add too little because your cake balls will crack open when inserting the stick. You also don’t want to add too much because your cake balls won’t keep their shape and are sticky to work with.
This is about the consistancy you are looking for:
Step 4:
Roll the mixture into little cake balls. We used a table spoon measuring spoon to keep the size consistent.
Step 5:
Put your cake balls aside for now and heat up one square of your candy coating as directed on the packaging. Then, mix your food coloring. Make sure the consistency of the candy coating when melted isn’t too thick. Dip your lollipop sticks into the candy coating and insert the stick into the cake ball.
A helpful tip – This candy coating is actually white chocolate and chocolate is extremely temperamental. If you over heat it, it will start to loose it’s liquid state. Don’t think that heating it more will make it more liquid because that is definitely not the case! Adding shortening to your over heated chocolate can sometimes help with making it more liquid-y. Don’t use it unless absolutely necessary though because you will get a few small clumps in your mixture that can be hard to work around.
Once the candy coating is dry, it acts as a glue to keep everything in place. Once done with this step, put these in the refrigerator for 20+ minutes. Taking the time to chill them helps to make step 6 a lot easier.
Step 6:
Melt the rest of your candy coating and add food coloring. You’ll want the candy coating to not be too thin of a mixture but not pasty either. If it’s too runny, your cake pops will crack while drying. MAKE SURE to cover the cake pop COMPLETELY when dipping. If you leave any holes, the vegetable oil in the cake will start to leak out if not properly sealed with the candy coating. It is also easier to use a deep bowl so that your cake pop dips completely into the candy coating.
Make sure to tap off on the side of the bowl the extra dripping candy coating. This will save you some trouble! We have found it best to hold the cake pops upside down in the open freezer to help them to dry quicker and not have any drips. Make sure upside down!
Step 7:
NOW, you don’t want to dry them completely in the freezer, just enough so that they are still a tad wet so your sprinkles will stick. To finish drying the cake pops, stick them in the Styrofoam. They dry pretty quick and shouldn’t take more than 10 minutes to harden.
One other helpful tip…If your cake is a dark color and your candy coating is a light color, you may need to do two layers of candy coating and double dip them. Obviously, add your sprinkles after the second coat.
Step 8:
Once completely dry and hardened, they are ready for wrapping and sharing! Enjoy!
